Chach's Hot Chocolate
2 quarts milk, warmed
1 quart heavy cream
1 cup chocolate syrup
1/3 cup sugar
Whip cream, add sugar, syrup until stiff. Add heaping spoonfuls of cream to warm milk.
Alternate version: French Hot Chocolate
2 1/2 to 3 squares baking chocolate
1/2 cup cold water
1/2 tsp. salt
3/4 cup sugar
1/2 to 1 cup heavy whipped cream (before whipping)
1 tsp. vanilla
Combine the chocolate with water and cook over low heat until smooth and thick, stirring constantly. Add salt, sugar, and boil five minutes. Cool and fold in whipped cream. Store in refrigerator until ready to use. Spoon heaping tablespoon of chocolate mixture into cup pour hot (not boiled) milk over.
