2 Tbsp olive oil
3-4 cloves garlic, minced
12 cup chopped onion
2 cans (14.5 oz. each) chopped tomatoes
2 cans (15.5 oz each) cannellini, white kidney, white navy or great northern beans
1/2 can kidney beans
1 can chicken bouillion
2-3 bay leaves
1 tsp. oregano
1 tsp. basil
1/2 tsp each salt and pepper
1 pkg, cheese tortellini (add last 5 min)
Fresh spinach, torn (add as serving)
If using sausage crumble and brown first. Pull all ingredients in slow cooker and cook on low heat for several hours or high heat for one hour. Add tortellini, cooked. Just before serving add torn spinach into the bottom of bowl and top with soup, serve.
